our seasonings

Our organic, low sodium, sugar free*, gluten free & chemical free seasonings are created using freshly ground certified organic herbs & spices, organically grown peppers plus a dash of Kosher salt. Our seasonings meet FDA guidelines for low sodium content - this happened by accident, not by design. When seasonings are layered properly, and when there are no fillers of chemicals to season, large amounts of salt are not needed for full flavor. Just a smidge of salt is needed to sweat the food item enough so the flavors of the seasonings penetrate.

Our seasonings are medium heat. If you want hotter, add our Cayenne Blend.

Smiling Jim freshly grinds the certified organic herbs and spices, and the orgnically grown peppers for each small batch. All ingredients carefully ground in stages and sieved to provide different taste experiences with different textures and intensity. Smiling Jim does not merely mix ingredients together - he BUILDS each delicious seasoning. Textures and layers are critical for high end seasoning blends.

Our seasonings are not limited to their titles. They are versitile & flavorful seasonings that are delicious on vegetables cooked in any manner, on meat substitutes or to make low sodium soup bases. Make your own delicious sausage at home!

So easy to make flavorful sausage patties at home! Add our Anytime Sausage Seasoning to 2 lbs. of of ground pork, beef, venison or any other protein. Let the mixture set for 30 minutes. Grill or pan fry patties, make balls of sausage, saute them to add to to add to soups, pastas or add to recipes to add flavor.

Ingredients

Chicken & Fish Seasoning

An expertly crafted, delicious seasoning, with a hint of lemon, blended to compliment all poultry, any fish, vegetables. Use it on whole birds, pieces, in a casserole or on the grill. Aromatic and flavorful, it's a sensation on salmon and a perfect addition to soup bases or broths. Let the subtle notes enhance your culinary creations. Low sodium, gluten free, sugar free. No MSG, no chemicals. Certified organic herbs & spices, kosher salt.

  • Place 2-3 Ibs. of chicken, turkey -whole, pieces or burgers or 2-3 Ibs. of fish on a rack on a platter.

    Cover all surfaces liberally with seasoning. Let it set uncovered in the refrigerator 8-24 Hours

    For burgers & fish, let set for 1 - 2 hours. For vegetables add seasoning while cooking. Cook in your usual manner. No other spices needed for flavor.

    For BBQ, add equal parts of our Chicken & Fish and our BBQ Rub!!! Incredible!

Italian Seasoning

Infused with aromatic basil, oregano, thyme, rosemary, and other exquisite Italian herbs, our seasoning brings the rich and savory notes that define classic Italian dishes.

  • Spaghetti sauce - Add 2 T seasoning per 28 oz of unstasoned tomato puree or sauce, plus 1 t olive oil. Cook in your usual manner.

    Salad dressing - add 3 t seasoning to 1/4 C vinegar & 374 C olive or vegetable oil in a small jar. Shake well Let sit 1/2 hour, shake again & serve.

Smokey perfection awaits with our BBQ Rub. Aromatic and flavorful, this rub transcends grilling, making every dish a masterpiece. Primarily for pork and fowl, but if you add our beef seasoning in equal parts, you will have the best brisket or any kind of beef seasoning.

Whether you're using a grill or not, the unbeatable flavor of our BBQ Rub will elevate your culinary creations to new heights. You won’t believe how delicious your ribs will be!

  • SMILING JIM’S Slow Cooked BBQ Pulled Beef

    This recipe is for about 3 lbs. of bone in chuck roast.

    Cover all sides of the bone in chuck roast with Smiling Jim’s BBQ Rub, re-serving 1 T of seasoning. Place the roast on a cake rack, on a plate, and refrigerate overnight. Do not cover the roast; this insures air flow all around the roast.

    Sear all sides of the roast, to seal in the juices, in a frying pan or your slow cooker if it has this setting. Place the roast in your slow cooker (if you seared it in a pan).

    Add 1 1/2 Cups water or beer.

    Add 1/2 Cup each of medium chopped carrot, onion & celery.

    Use your slow cooker’s instructions to determine the temperature and how long to cook the roast. We cook ours at 203° for 6 hours. Turn over the roast half way through the cooking time.

    Add the reserved 1 T of seasoning.

    Cook until tender.

    Tip From Smiling Jim— Remove the wonderful fat on top with a piece of bread or a paper towel. It has done its job!

    Pull the roast into small chunks. Do Not shred. Blend in up to 1/2 C. Catsup or Tomato Juice.
